8 medium new beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons entire cloves
1-1/2 teaspoons entire allspice
1/2 teaspoon salt

Scour beets and trim tops to 1 in. Place in a Dutch broiler; add water to cover. Heat to the point of boiling. Diminish heat; stew, covered, 25-30 minutes or until delicate. Eliminate from water; cool. Strip beets and cut; place in a bowl and put away.
In a little pot, consolidate vinegar, sugar, cloves, allspice and salt. Heat to the point of boiling; bubble 5 minutes. Pour over beets. Refrigerate somewhere around 60 minutes. Channel prior to serving.
